I’m on a soup kick! Fall is in full swing (although it became confused and turned into winter over the weekend) and what better way to enjoy this season than by making tons of comforting soup recipes?!

Last week we enjoyed Creamy Tortellini Soup and later this week it’ll be Butternut Squash Soup. Today I bring to you the cheesiest, most vegetable-packed soup you’ll ever have the pleasure of knowing. I poured myself a bowl last night and then another half bowl because it was impossible to resist.

This soup is comforting, cheesy, flavorful, satisfying and delicious!

This Cheesy Veggie Soup is a great option for a busy weeknight or to serve at a weekend party! I hope you enjoy it!

Best Vegetables To Use For Soup

I didn’t quiiiiite squeeze all of these into this Cheesy Vegetable Soup, but close! It is jam-packed full of yummy fresh veggies! I loved this soup so much. Honestly, I love packing every single vegetable inside a bowl of soup, but if I had to pick favorites it would go like this:

  • Carrots
  • Broccoli
  • Cauliflower
  • Green beans
  • Onions
  • Celery
  • Potatoes
  • Peas
  • Tomatoes
  • Corn
  • Zucchini
  • Mushrooms
  • Asparagus

How To Make Cheesy Vegetable Soup

In a nutshell there are only a handful of steps required to make this easy creamy cheesy soup!

STEP 1

Heat the water in a large skillet or Dutch oven over medium-high heat. Add the chicken bouillon cubes and stir until dissolved. Add onions, celery, carrots, broccoli, cauliflower and potatoes.

Cook until all the vegetables are all tender.

Simmer for 30 minutes. Pour cream of chicken soup into the soup and bring to a boil.

STEP 2

Add the Velveeta to the skillet and continue to stir until smooth. Do not bring the mixture to a boil once the cheese has been added. Sprinkle with salt and pepper to season!

Recipe Notes

  • Serving this soup in a bread bowl would be AH-mazing.
  • If you want a heartier soup, add some shredded rotisserie chicken.
  • Because this soup has cheese and vegetables in it, you’d think it would be perfect for freezing for later. But unfortunately, this soup would separate and the vegetables would become mushy, stringy and/or grainy. Enjoy this soup and refrigerate leftovers for up to 5 days.

  • 3 cups water
  • 3 chicken bouillon cubes
  • 1 yellow onion chopped
  • 4 stalks celery chopped
  • 3 carrots peeled and sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 Russet potato peeled and cubed
  • 2 cans cream of chicken soup
  • 1 1/2 lb Velveeta cubed
