Perhaps you remember my mom’s recipe for Beef on Rice? (If you aren’t familiar with it, don’t worry, there’s plenty of time to acquaint yourself.)

My mom would make this dish in the slow cooker, and excitedly announce as we went off to school, “Beef on rice tonight kids!” to give us something to look forward to all day. Because we totally all looked forward to this dish. The beef was tender and juicy after cooking all day and it took very little effort to get it that way. It’s the most perfect comfort food dish.

But, let’s say you are sick of the slow cooker or you forgot to add your ingredients to it before you left for work or you just want to play with your new Instant Pot (there’s no shame in that), then this Instant Pot Beef Tips recipe is for you. It’s everything you loved about Beef on Rice except quickly cooked in your Instant Pot for (nearly) instant gratification.

I added a couple extra ingredients to this recipe (mushrooms, garlic, worcestershire) but you can skip them if you want and this recipe will be almost exactly like the Beef on Rice except adapted for the Instant Pot.

What Kind of Beef is Used for Beef Tips?

I admit, the term “beef tips” is kind of nebulous when you think about it, isn’t it? What constitutes the tip of some beef anyway? Well, I was curious myself so I did a little digging. It turns out that beef tips are not made from one specific cut of meat but rather can come from a variety of cuts. Sirloin, chuck roast, or another tougher, fattier section of meat is used. The butcher will likely have already cubed these up at your grocery store and labeled them as “stew meat” or “beef tips.” Any variety will work in this recipe as you’ll cook it long enough to tenderize the meat.

Best Side Dishes for Beef Tips

As you know, my mom’s original recipe for Beef ON Rice was just that — beef tips slow cooked all day and with a to-die-for gravy served ON top of rice. I still like beef tips served this way but other options include:

  • Using brown rice or a wild rice mix for a different taste and texture to your meal.
  • Using mashed potatoes as your base.
  • Egg noodles are a perfect complement to beef tips, I promise you’ll enjoy the heck out of noodles and beef together.
  • Polenta or grits — something you probably didn’t think about but just as delicious to layer under the beef tips.
  • Instead of adding beef tips on top of a starch, you could add something like roasted potatoes on the side.
  • For a carb-free meal, consider adding a salad or roasted vegetable on the side.
  • You might also enjoy these beef tips over any of the above and with a side of dinner rolls for dipping in all of that wonderful gravy.
  • Braised red cabbage is another veggie side that is just screaming to be served with beef tips.
  • Serve this beef with garlic bread for an out-of-this-world, delicious dish.

Expert Tips and Tricks

For this dish, I added mushrooms, garlic and worcestershire sauce. There are other ways you could customize this dish as well, including:

  • Steaming broccoli and adding it to the dish at the end when it’s time to make the gravy (during step 5).
  • Use a variety of mushrooms — any kind will be delicious!
  • Try adding a tablespoon of soy sauce instead of or in addition to the worcestershire.
  • Substitute half a cup of red wine for half a cup of the beef broth for a deeper, richer flavor to your gravy and sauce.
  • Add your own Italian seasonings if you don’t have an Italian blend seasoning. Or use a dry packet of Italian dressing.
  • Diced celery and carrots cook up nicely with the beef and gives the dish more of a hearty “stew” vibe and taste.

FAQs

Does beef get tender in Instant Pot? ›

Normally, the only way to achieve a melt-in-your-mouth texture with tougher cuts of beef (like the beef used for beef stew) is hours of low and slow cooking. The Instant Pot speeds the process along. Because no moisture escapes, it locks tenderness into every bite of the beef.

Why is my stew meat tough in Instant Pot? ›

Additionally stew meat tends to have more tough gristle, which will never get tender. Using a large piece of boneless chuck allows you to easily trim off all the unwanted parts first, then cut the beef into uniform 1 1/2-inch pieces that will cook more evenly in the pressure cooker.

Can you cook frozen beef in Instant Pot? ›

Yes, it is safe to cook frozen food in a pressure cooker or an electric pressure cooker like an Instant Pot.

Will pressure cooking tough meat make it tender? ›

Both slow cookers and pressure cookers do a good job of tenderizing tough meat, but each makes meat more edible in a different way.

Is it better to slow cook or pressure cook beef? ›

This completely depends on the type of meat you are planning on cooking. Because slow cookers take longer to cook, they are better suited to breaking down fat in meat while adding moisture. So if you are planning on cooking a whole rump beef, then a slow cooker is a better choice.

Does beef get more tender the longer you cook it? ›

This is certainly true when it comes to notoriously tough cuts of meat like beef brisket and pork shoulder. Cooking these cuts of meat slowly, either by braising, stewing or grill roasting, is the best way to get these tasty cuts of meat meltingly tender.

Do you cover meat with liquid in pressure cooker? ›

While you may cover meat almost completely for a conventional braise, use just enough liquid for the cooker to reach pressure – during pressure cooking the meat will release it's own juice and braise in that flavorful liquid, instead.

Can you overcook stew in a pressure cooker? ›

Unfortunately, once you overcook a piece of meat in the pressure cooker, there's no going back. You'll be left with a pile of dry, crunchy, tasteless fibers and no amount of additional pressure cooking is going to put that moisture back into the meat.

Can you overcook stewing beef in a slow cooker? ›

Slow cookers are specially designed to cook food for long periods of time, but yes, you can still overcook in a slow cooker if something is left on the wrong setting for longer than it's supposed to be.

How do you cook frozen beef without thawing it? ›

What is the best meat to pressure cook? ›

What is the best cut of beef to pressure cook? ›

Chuck roast, brisket and short ribs are the best cut because they contain a lot of connective tissue. During both slow & pressure cooking, that connective tissue breaks down and turns into gelatin giving the beef a rich, meaty flavour and a tender, juicy texture.

How do you cook stew meat without it getting tough? ›

If you want super tender beef, you'll need to cook it on a low heat in a Dutch oven on the stove or a slow cooker for at least a few hours. Chuck meat is your best bet for beef stew, but it's also a pretty tough cut so it needs time to break down and become tender.

How do you soften tough beef stew meat? ›

Cook it slow and steady.

This gives collagens in the tough muscle tissue time to melt and make the meat tender. Try tasting a bite after an hour, two hours, and three hours — you'll see how the meat goes from chewy to pretty good to fall-apart tender.

How do you fix tough stew meat? ›

Simmer in liquid. Just like for burnt meat, if your meat gets tough and dry then you can simmer it in a little bit of broth for a couple minutes. Don't allow it to overcook again but just allow the liquid to penetrate the meat.
