Big on flavor.

This is not a creamy broth but you won't miss the cream and you'll save yourself a boatload of calories.

Spinach and carrots add flavor and vitamins making this one of the more hearty and healthy soups you can make in a slow cooker. The chicken-based broth is light yet full of flavor.

It's just so full of flavor, hearty and so colorful! Everyone always raves about this soup whenever it's made. It's great for making to feed a crowd or to share with neighbors, friends or family.

You only need 9 basic ingredients.

  1. Tortellini.
  2. Spinach.
  3. Sausage.
  4. Celery.
  5. Carrots.
  6. Onion.
  7. Garlic.
  8. Bay Leaf.
  9. Chicken broth.

Use fresh or frozen tortellini.

Either one works. Frozen may take a couple minutes longer to cook if you put it in the soup frozen, but you absolutely can do that. The trick is finding a good brand of tortellini to suit your taste buds. Luckily, there are all sorts of choices — dry, frozen or fresh.Or heck, make your own tortellini if you have those kind of skills! You don't have to be Italian but I'm sure it helps. 😉

I like to keep it easy.

As are most of my recipes, this soup is so so so easy! So you might guess that I opt for the dry tortellini to keep it easy and to save freezer space.

Another trick is the sausage. You can choose Italian sausage or you can try other breakfast sausages. I really enjoy the sausage with thyme added, gives it a nice twist if you make this a lot and want to mix it up.

As far as veggies go, feel free to add kale in with the spinach if you are like me and usually have a giant bag of it and don't know what to do with it all!

Tips & FAQs ★

Cook this on the stove or in your crockpot.

If using your slow cooker, you do not need to saute the veggies first. Add everything to your crockpot minus the tortellini and spinach. Cook on low for 4 hours or high for 2 hours. 20 minutes before serving, stir in the tortellini and spinach.

Instructions

  • In a dutch oven or large pot over medium-high heat, sauté sausage with carrots, celery and onion for about 12 minutes, stirring frequently and breaking up sausage into small chunks. Add garlic and cook for an additional minute.

*If finishing in a slow cooker, transfer everything to your crockpot when done.

  • Add chicken stock and bay leaves and bring to a boil then reduce heat to medium-low.

  • Add fresh tortellini and fresh spinach. Cook on medium low for 3 minutes then serve.

*If using dry tortellini, add that first and cook for 10 minutes, adding the fresh spinach the last 3 minutes of cooking.

Notes

Whenever I sauté carrots, celery, and onion I chop and add the carrots to the pot first. Then while those start to cook, I chop the celery and then add that. Finally the same with the onion—chop that after I add the celery then add it to the pot. Reason being, the carrots are tougher and need a little more cook time, celery a little more than the onion. And you can reduce the overall cook time by chopping while you've started cooking rather than chopping everything in advance.
